Which Spanish recipes are not to be missed? 

Potato omelette

The key to making a good potato omelette is that the inside is slightly creamy. To make this recipe you need: eggs, potatoes, onion, olive oil and salt.

First of all, peel and cut the potatoes into thin slices and fry them in the hot olive oil. Do the same with the onion, all together in the same pan.

Meanwhile, beat the eggs and add a pinch of salt. Once the potatoes and onion are done, mix them in the bowl with the eggs and leave to stand for a few minutes so that all the flavours are impregnated and the potatoes soak well.

Take another frying pan with a little oil and add the mixture. Once we see that it begins to take consistency, with the help of a flat surface, we turn the frying pan over and cook it on the other side.

Gazpacho

This recipe of Andalusian origin conquers every summer in the Iberian Peninsula. 

As we have said before, everyone makes the recipe to their own taste and with this one it is no less, in the end it is all about finding the perfect combination for your taste.

The main ingredients are: perilla tomatoes, peppers, olive oil, bread, water, salt and vinegar. These ingredients are chopped and crushed in a food processor and, as a last step, after crushing, we pass it through a fine sieve so that no skins or seeds are left.

The secret is to leave it in the fridge for a couple of hours and drink it very fresh on hot days.

Paella

This rice recipe originating in the Valencian Community is one of the iconic dishes of Spanish culture.

As with all Spanish dishes, you can add whatever ingredients you like. In this case, we offer you a seafood paella from the Mediterranean coast. The key to making a good rice dish is in the sofrito and the point of the rice grains.

The ingredients are: rice, flakes, prawns, salt, green pepper, tomato, onion, garlic cloves, diced monkfish, clams and fish stock.

We take all the short vegetables and fry them for 5 minutes in the frying pan. Once they are well done, add the prawns, clams and fish. Once the fish is ready, add the rice, stir and add the fish stock.

When it starts to boil, add the prawns and leave to stand for approximately 15 minutes until the rice is ready.
